CM6. 6.1 RC1 isnt out for the Inc yet tho but you can flash the nightly builds but the camcorder FCs. You can flash 6.0 but doesnt have as much features.

There is also Ruby and ShadowROM. I liked CM better than both tho but I was running the nightly builds.

Is shadowrom fully sensless? Redemption is starting to force close a bunch of stuff, ive already fixed permissions and it helps, but i feel its time to move on

They are changing ShadowROM so they stopped putting out updates for now. I would go with Cyanogen.
